For the first time, Balbosté curates the culinary scene of Matter and Shape with Scale by Balbosté, the fair’s restaurant, open for lunch and dinner throughout the event.

Conceived in resonance with the DNA of Matter and Shape, the culinary proposal explores plays of scale, texture, material and form. Each plate becomes a visual composition in its own right, where scale is expressed through contrasts, reliefs and rhythms, in a constant dialogue between fullness and emptiness, rawness and delicacy.

The cuisine of Scale by Balbosté is rooted in a rigorous selection of seasonal ingredients, chosen for their precision of flavour and singularity. Sourced from committed producers across different territories, with particular attention paid to quality, cultivation methods and respect for the living world, these ingredients guide the gesture, colour and texture of each dish, forming the basis of an almost sculptural culinary approach.
